Butter Bean Carbonara

Try adding butter beans to your diet instead of animal sources of protein. This delicious recipes is very easy to make, especially if you buy pre-cooekd butterbeans.

If you don’t like the smoked tofu in this recipe, feel free to replace it with regular tofu and season it well.

Ingredients

  • Butter beans (2 cups) – cooked
  • Smoked Tofu (1/2 block) – cut into large chunks
  • Leek (1) – finely sliced
  • Garlic (2 cloves) – minced
  • Onion (1) – finely sliced
  • Oat cream (1 carton)
  • Herb salt (1 tsp)
  • White miso (1 tbsp)
  • Nutritional yeast flakes
  • Sunflower/sesame oil (1 tbsp)
  • Parsley (handful) – finely chopped

Method

Heat the oil and saute the onion, leek and garlic for a couple of minutes. Then add in the tofu and fry for a few minutes. Add in the butter beans and oat cream and the herb salt, white miso & nutritional yeast flakes. Simmer gently for 5 minutes. Sprinkle with the fresh parsley. Serve with a pasta or other dishes of your choices.
