Course Overview
People sometimes think it takes a long time to cook healthy meals – but it’s not true! We can make lots of healthy, varied meals in under half an hour to sustain our energy and health.
I cook for myself and often others most days, and very often create whole meals in 20 to 40 minutes, and I want to share the secrets of preparing simple quick meals with you in this series of classes.
The course will begin with looking at healthy meal planning, and the ingredients and cooking methods to create quick meals. The first evening I will show you how to make a complete quick meal, and on the second and third I will cook another 4 satisfying meals.
You will receive a set of course notes including all the recipes I cook, and recordings of the classes afterwards. All the meals will be plant based, sugar and dairy free.
Variety is important in sustaining good health and keeping our energy levels high, using a wide range of ingredients, cooking styles and dishes. We can create an endless variety of meals to satisfy our appetite and lead active lives!
What You’ll Get
Evening 1
- What ingredients to use for making quick meals.
- Quick cooking styles.
- Making quick pickles and pressed salads for later use.
- Roasting seeds and other dishes to make, once a week.
- Use of seasonings to create variety in flavours.
- Creating difference food textures - firm, crunchy, creamy etc. to satisfy our needs for variety in meals.
Quick Meal 1
Herby moroccan bulgar wheat with creamy bean stew, pressed beetroot and courgette salad, and sweet poached nectarine dessert.
Evening 2
Quick Meal 2
Red lentil dahl, quinoa and long grain brown rice, steamed sweet roots and tempura greens with a dip sauce.
Quick Meal 3
Braised tofu with pasta salad, sweet fried carrots, pea and corn salad, and nutty stuffed steamed apples.
Evening 3
Quick Meal 4
Crispy sweet and sour tempeh with orange couscous, fried sweet potatoo chips and blanched greens with a mustard dressing
Quick Meal 5
One pot shoyu broth with noodles, tofu, wakame, mushrooms and vegetables, followed by creamy amasake pudding.

It was interesting to learn about the emotional and mental sides of healing, not just the physical. Very fascinating!

Fees
The fee for the course is £60. This includes 3 live 1.5 hour internet video lessons and recipes. You will also be sent the recording of each video lesson afterwards to watch again, or if you had to miss the live video session.
