Rediscovering Food and Wellness: Gilly’s Story

Gilly struggled for years with the effects of an overactive thyroid, over-medication, and an unsuitable, strict diet that left her fatigued and disconnected from food. Through her studies at the International Macrobiotic School, she discovered how wholesome, nourishing food, balanced energy, and mindful living shape our health. By reclaiming her relationship with food and learning to cook with intention, she not only restored her wellbeing but also found a new purpose: sharing her knowledge and creating therapeutic culinary experiences for others.
During my time at the School, I gained more than just culinary skills. I gained a deep understanding of food as medicine. I learned how to prepare balanced meals and dishes using wholesome, nourishing, natural ingredients.
At first, I was in disbelief at the food served at the School. Back in 2001, an overactive thyroid, over-medication, and other health issues had led a macrobiotic counsellor to place me on a strict no-salt diet. Unknowingly, I had been living for over three years on a diet that was no longer suitable for me.
The School gave me the tools to completely overhaul my cooking: what I cooked, how I cooked it, and, most importantly, I began enjoying food again. Today, I cook professionally from my home kitchen, welcoming Airbnb guests into a bespoke, therapeutic space in my garden. I also teach guests the principles of the Five Elements and the basics of Yin and Yang. My kitchen attracts a cross-section of people: the curious, those exploring vegan or macrobiotic diets, or guests following diets prescribed by their GP, nutritionist, or health counsellor. I also support individuals on writing and artistic retreats with meals designed to nurture both body and mind.
Beyond cooking, the training transformed my personal life. I had a materially comfortable upbringing, but my parents were disinterested and ill-suited to parenting. As a result, I received little structure or encouragement growing up. The wisdom imparted by my teachers allowed me to explore these gaps in my own life. Their insights were both encouraging and practical, teaching me essential ground rules for living that I might otherwise have learned through supportive parenting. Their guidance set me on a truly transformative path for self-exploration and personal growth.
This journey has shown me that food is far more than sustenance, it is a path to wellness, creativity, and self-discovery. The skills, knowledge, and life lessons I gained at the School continue to shape how I nourish myself, my guests, and my community every day.
